#MacNCheeseFridays Recipes, Vol. 1

Since we’ve been on a #MacNCheeseFridays temporary hiatus, these are two wildly successful recipes I’ve made recently.

 

CRAB MAC ‘N’ CHEESE

You Will Need:

8 oz. uncooked elbow macaroni

2 cups shredded sharp Cheddar cheese (or whatever cheese you prefer)

1/2 cup grated Parmesan cheese

3 cups milk

1/4 cup butter

2 1/2 tbsp flour

1 can  drained crab meat (or 1 lb. imitation)

 

Directions:

  1. Cook macaroni according to box instructions. Add crab meat while cooking. When done, drain and set aside.
  2. In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick.
  3. Pour cheese sauce over pasta and crab mixture. Serve!

 

 

GREEK MAC ‘N’ CHEESE

Greek Mac

You Will Need:

Nonstick cooking spray

3 cups uncooked elbow macaroni

1/4 cup butter

3 tbsp flour

1/4 tsp salt

3/4 cup + 2 tbsp milk

1 1/2 cup (1/3 lb) shredded Fontina cheese

1/2 cup panko bread crumbs

7 oz. marinated artichoke hearts, drained

3 cloves garlic, minced

Any extras you want- I add about 1/4 cup Greek olives and 1/2 purple onion, chopped. You could also add a protein like chicken.

Directions:

  1. Preheat oven to 350°F. Coat a 2qt square baking dish with cooking spray and set aside.
  2. Cook pasta according to box instructions. Drain and set aside.
  3. Melt butter in medium saucepan. Add flour and salt and stir for 1 minute. Add milk and stir over medium heat until thick and bubbly. Remove from heat and stir in cheese until melted.
  4. Puree artichoke hearts, garlic, and any extras.
  5. Pour cheese sauce over pasta, coating evenly. Stir in artichoke puree.
  6. Transfer mixture to baking dish and sprinkle evenly with bread crumbs. Bake for 20 minutes or until heated through. Serve!

 

What’s great about these recipes is that you can make extra to freeze for later (well, the Greek Mac makes enough with a single recipe for us to freeze some). Hope you enjoy these as much as my family did!
